By the way, even though he's a great striker, I would leave Gignac on the bench until he drops his obnoxious and embarrasing goal-scoring celebration. Titi needs to teach him some better moves...

The problem with your theory is that France doesn't really have great wing players on the right side. (Gouvou is effective, but certainly not the best player for les bleus) France plays the way it does because Domenech is overly cautious. There's no need to play 2 holding midfielders when France has such a profusion of attacking talent, especially in the center of the pitch.

There is no reason a healthy Ribery couldn't take on the attacking center mid role. And if Ribery is injured, Gourcuff or Nasri could play that role.

            Frey
Sagna Mexes Gallas Evra
           Sissoko
Govou Henry/Malouda
           Ribery
   Anelka Benzema/Gignac/Henry

Or, France could play a 4-3-3 with:

             Frey
Sagna Mexes Gallas Evra
   Sissoko Toulalan
             Ribery
Gouvou Gignac/Anelka Henry

or, if you really want to attack:

              Frey
Sagna Mexes Gallas Evra
            Sissoko
      Gourcuff Ribery
Gouvou Gignac/Anelka/Benzema Henry

The point is, an attack-minded coach would figure out how to get the best attacking players on the field (although the Ireland matches are probably not the best time for experimentation).
